Favorite Foods

I am a comfort food nut. I don't like to cook. I just want easy feel good meals. I could go to Olive Garden for pasta, unlimited breadsticks (dipped in alfredo sauce, duh), wine samples, and tiramasu every.day.

(it is a miracle I am not 100+ more pounds) 

So if I can find easy and healthy foods - then I feel like it is my duty to share them with the me's out there :D I recently brought a meal to a friend who just had her second beautiful babe. I wanted to include a little more healthy snack/meal option that would be easy for her to grab to get some good nutrition to keep up with her two littles. So I brought over some homemade salsa (which is also great for adding to tacos!)

Here's what I put in it (this makes a decent sized amount, so you could 1/2 this for a more regular size portion):

  • 1 can of canned corn (drained)
  • 2 cans of black beans (rinsed)
  • 3 tablespoons cilantro (diced)
  • 1/2 onion (diced)
  • 3 red/green/yellow peppers (diced)
  • 1 cubanelle pepper (diced)
  • 2 medium tomatoes (diced)
  • 1 Tablespoon fresh garlic (diced)
  • 1 cup Italian dressing
  • 1 tsp chili powder

I have a hand food processor that I always use to chop my onions, as well as other things : totally worth the investment mamas! We don't need more tears.

And I use an app on my phone, called AnyList, for my grocery list (because I always remember my phone, but never my hand written list). It also helps organize my items so I avoid circling Meijer 3 times with my toddler (please tell me I am not the only one who uses the free cookies as a bribe to get through the store?!)
